Cannelloni of tuna and seafood

Ingredients for 4 people

  • 400g of fresh egg pastry “Leonessa”
  •  250g of fresh bluefin tuna
  •  50g of butter
  • 70g of flour 00
  •  500g of seafood (mussels
  •  clams and cockles)
  • 4 tablespoons of extra virgin olive oil
  • 2 cherry tomatoes
  • 1 clove of Garlic
  • Parsley
  •  Pepper
  •  and Salt to taste

Preparation

In a pot with a lid, cook the seafood in ½ liter of water and let them open. Remove the shells and filter the water. Then, prepare a fish white sauce by melting in a small saucepan the butter, to which add the flour, and the seafood water (previously filtered). Apart, in salted water, cook the pastry, let it cool and dry. Then, over the cooked pastry, spread the white sauce, thin slices of bluefin tuna, some chopped parsley and a pinch of salt and pepper. Roll up the pastry, sprinkle with a little olive oil and cut the roll of the desired size. Bake for 12 minutes at 160 ° C. In the meanwhile, in a skillet, brown the crushed garlic in olive oil and hot pepper. When the garlic becomes brown, take it off. Add diced tomatoes, seafood and cook for a couple of minutes over high heat . Serve the rolled pasta with seafood sauce.
