Ingredients for 4 people

  • 350 g Scialatielli Paglia e fieno Leonessa
  • 150 g pork sausage
  • 100 g chestnuts steamed
  • 2 eggs
  • 1 shallot
  • rosemary
  • grated Parmesan cheese
  • salt
  • pepper
  • extra virgin olive oil

Preparation

To make the straw and hay with sausage and chestnuts start to brown the pork sausage. Heat a little oil in a pan. Clean and chop a shallot with the help of a carving knife. Put it in the pan. Meanwhile, cut the sausage into pieces and add it to the shallot. Cook for about 10 minutes. Cut the boiled chestnuts coarsely, then add them to the sausage and cook for another 10 minutes. Meanwhile cook the straw and hay dough in boiling salted water for 6-7 minutes. Prepare the stracciatella by putting the eggs in a pan and half a ladle of cooking water. Cook over high heat and add salt and pepper. Drain the pasta and add the whole. Finally, arrange the straw and hay with sausage and chestnuts, sprinkling with Parmesan and decorating with rosemary.
