Panciotti Pasta with pumpkin cream and smoked herring

Panciotto Confezione 500gr

Ingredients for 4 people

  • 600g of “Panciotti Pasta” by Leonessa
  • 750g of pumpkin cleaned and diced
  • 1 fillet of smoked herring desalted
  • 1 Carrot
  • 4 tablespoons of extra virgin olive oil
  • ¼ onion
  • 1 stalk of celery
  • 1 clove of Garlic
  • Chives


In a large pan, fry the garlic in the oil, than when it gets golden brown take it off and add the onion, previously cut into strips, than add the celery, a peeled carrot, and leave all to brown for about 5 minutes. Make sure that the vegetables don’t get overcooked. Later add the pumpkin and let cook for another 20 minutes all covered by a lid. Than take off the lid and remove the celery and the carrot and whisk all with a blender. Let all cook for another 20 minutes over medium heat and without the lid until you get a creamy sauce. Add salt. Cook the pasta in salted water, drain it. Cream the pasta with the pumpkin sauce. Serve adding the herring cut into small pieces and the chives
