Cavatelli alla Idarella

Ingredients for 4 people

  • 500 gr of fresh Cavatelli Leonessa
  • 400 gr of spinach
  • 100 gr of speck
  • 100 gr of ricotta cheese
  • 50 cl of cream
  • 30gr of butter
  • a clove of garlic
  • 1 spoon of strong paprika
  • 3 egg yolks egg
  • chives


In a casserole sauté the speck cut into strips in butter, add the fresh spinach leaves and cook them for 5/6 minutes covered. Separately, in a bowl, melted the paprika with ricotta and cream. I warm the cavatelli, and I add them to the spinach and to the mix of cream and ricotta. Manteco all at high heat for a couple of minutes, then add the egg yolks and servant decorated with chives.
