In a large skillet, fry the leek finely chopped and the sausage (previously peeled and cut into pieces). After a few minutes, add 1 grated courgette and let it cook for another 3 minutes. In the meanwhile, apart, in salted water cook the noodles pasta. Then add a ladle of pasta cooking water into the pan, where the sausage is, and let it cook. Just three minutes before the pasta is cooked, add the other courgette cut into julienne strips. Drain the pasta al dente. Add it to the sausages, and crem all by adding a handful of cheese. Serve and garnish with parmesan cheese.
