In a large pan boil the hearts pasta in salted water. In the meantime brown the speck in oil. Switch it off, take the speck off and add butter and let melt adding a nice sprig of rosemary washed and dried. Drain the hearts pasta, add them to sauce (the melted butter with rosemary), and sprinkle grated cheese. Serve hot adding the speck on top. Wine: falerno del massico.
