Small tortellini in black truffles from Norcia

Ingredients for 4 people

  • 600 gr of fresh tortellini mignon (or agnolotti of lean) Leonessa
  • 50 gr of black truffles
  • a porcino mushroom medium-sized
  • 100 ml. cream
  • 3 cloves of garlic
  • 2 tablespoons Extra Virgin Olive Oil
  • 30 gr margarine
  • grated parmesan cheese
  • parsley


Cut the garlic finely and brown it in oil and margarine, then add the minced mushroom and truffle grated and cook for about two minutes, at the end add the cream, parsley and a little water from the cooking pasta and finish cooking for another two minutes. Boil pasta and skip all with the addition of grated cheese. Serve hot.
