Ingredients for 4 people

  • 400 g of Mezzemaniche Leonessa
  • 250 g of first goat salt
  • 1 tuft of chives
  • 10 ml of fresh cream
  • 2 bags of saffron
  • fruits of the caper
  • basil leaves
  • extra virgin olive oil
  • salt
  • pepper


First of all, put a pot of salted water on the stove, when the water is boiling, throw the pasta and cook the half sleeves lined for about 15 minutes. While the pasta is cooking, wash the chives, dry well and cut finely. Then put in a holster and mix the chopped chives, half a ladle of cooking water and the first salt. Then put a pan with the cream on the heat, pour the mixture, add the saffron and mix the ingredients to create a smooth cream. When the pasta is ready, drain and sauté with the cream cheese. Finally place the pasta in the dishes and garnish with some caper fruit and some basil leaves.
