Scialatielli with prawns and artichokes and mint

Ingredients for 4 people

  • 600 gr Scialatelli Leonessa
  • 8 medium-sized prawns
  • 2 artichokes cleaned and cut into slices
  • 4 leaves of fresh mint
  • ¼ chopped onion
  • 2 tablespoons of extra virgin olive oil
  • 50 grams of margarine
  • ground white pepper

Preparation

Shell the prawns and keep aside the heads. Brown in a frying pan the heads of prawns (crushing them) in oil, margarine and onion. After 5 min. take the heads off and keep cooking adding prawns, artichokes, 1 cup of water, salt, pepper and cook for about 15 minutes. Boil the pasta then drain and add to sauce, skip all together by adding the mint and serve.
