Pasta with smoked herring, buffalo mozzarella and caramelized tomatoes

Ingredients for 4 people

  • 250 gr of short Neapolitan fusilli Leonessa
  • smoked herring
  • breadcrumbs
  • extra virgin olive oil
  • 6 caramelized tomatoes
  • 4 mozzarelline di bufala campana dop
  • Origan
  • thyme
  • smoked salt


Put the water to boil for the pasta while you put the mozzarella muffins for a quarter of an hour in warm water. In a saucepan put some extra virgin olive oil and sauté the smoked herring fillets and cut them into small pieces not too thin for a few minutes. Meanwhile, prepare the caramel with sugar and water in equal parts and when it starts to caramel dip the tomatoes for a few minutes. Place them on a piece of parchment paper. In another pan toasted breadcrumbs with oil, oregano and smoked salt (or normal). Cook the pasta and sauté it in the pan with the herrings. Serve by adding the roughly frayed mozzarella by hand, the sautéed bread crumbs, the caramelized tomatoes, the thyme and if you go a little raw oil.
