Manicotti Pasta with mussels and green chillies

Ingredients for 4 people

  • 400g of “Manicotti Pasta” by Leonessa
  • 200g of Cherry Tomatoes
  • 200 gr of Green Chillies
  • 500g of mussels
  • 6 tablespoons of extra virgin olive oil
  • 2 cloves of Garlic
  • Parsley


Clean the mussels. Cook the mussels in a covered pan, and let them open. Then remove the shells and keep the shelled mussels in the cooking water previously filtered. In a frying pan, add in 4 tablespoons of oil a crushed clove of garlic. When the garlic gets brown, take if off and add the peppers previously cleaned and sliced and free of the seeds. Let cook for 3-4 minutes. In another pan, brown the whole garlic in 2 tablespoons oil, remove it when it gets brown. Than add cherry tomatoes cut into half. Add a ladle of the mussels cooking water and let cook for 5 minutes. In boiling salted water, cook the pasta. Drain it and cream with tomato sauce. Add the peppers, mussels and parsley finely chopped
