Maccheroni pasta with Fregola, walnuts and Cardoncelli mushrooms

Ingredients for 4 people

  • 500g of Macaroni “Leonessa”
  • 500g of cardoncelli mushrooms already cleaned
  • 150g of breadcrumbs
  • 50g of Extra virgin olive
  • 40g of shelled walnuts
  • 1 clove of garlic
  • Chopped parsley
  • curly parsley for decoration
  • Salt and pepper to taste


Heat 4 tablespoons of oil in a frying pan and toast the chopped bread with the help of a cutter. Apart, in another pan, fry the garlic in remaining oil and when it becomes brown, add the mushrooms cut into strips and let them cook for 5 minutes, then add salt and pepper. Cook the macaroni pasta in salted water, drain and put the pasta in the pan with the “cardoncelli”mushrooms. Add chopped parsley. Serve adding chopped walnuts, fresh ground pepper from the reel and decorate with parsley.
