Lagane with chickpeas

Ingredients for 4 people

  • 400 g of Lagane pasta (or scialatelli pasta)
  • 400 grams of boiled chickpeas
  • 4 tablespoons of extra virgin olive oil
  • 100 grams of pillow (similar to bacon) cut into cubes
  • 2 cherry tomatoes
  • a clove of garlic
  • chilli
  • fresh parsley.

Preparation

In a pan fry only one hundred grams of Lagane in abundant oil. Apart in a pot brown the garlic in oil and chilli, then add the pillow (or bacon), cherry tomatoes cut in half the parsley and cook for a couple of minutes. Add chickpeas, and half a liter of water and let cook on a moderate flame for about 15 min, add salt. Drain the remaining pasta and add it to the fried pasta, then add to the sauce and complete cooking. Garnish with a bunch of fresh parsley. Serve. VINO: Gragnano
