Garganelli with salmon

Ingredients for 4 people

  • 500 g of colored garganelli pasta
  • ½ small onion
  • 70 grams of smoked salmon
  • 40 g of butter
  • 2 tablespoons of olive oil
  • 3 cherry tomatoes
  • 200 ml of cream
  • 1 small glass of brandy
  • grated Parmesan cheese
  • parsley
  • salt and pepper

Preparation

Brown the onion and finely chopped salmon in butter and oil, as starts to get a brown colour add tomatoes cut into cubes and cook for a few minutes. Finally add the brandy and let it evaporate. Apart boil the Garganelli pasta, drain and add to sauce. Skip all together and keep cooking for a couple of minutes. Serve very hot.
