Mother-in-law calamarata

Ingredients for 4 people

  • 400gr Calamarata Leonessa
  • 300gr of Roman ricotta
  • 150cl of milk
  • 10gr of butter
  • 1 nut for broth
  • red pepper
  • Parmesan cheese q.b. .


In a bowl, melt the nut, butter and pepper in the milk, being careful not to let it boil. From a large pot boil at least 4 liters of water, just boil the calamarata, and after about 9 minutes of cooking the drain and manteco in the milk together with ricotta cheese and cheese, if necessary add a little 'water cooking pasta. Serve hot.
