Ingredients for 4 people

  • 400 gr Paccheri Leonessa
  • 400 gr of cherry tomatoes
  • 250 gr of provola cheese
  • 1 clove of garlic
  • a little spicy pepper
  • 4 tablespoons of extra virgin olive oil
  • salt


In a pan fry the crushed garlic and a little pepper in the oil. As soon as the garlic is browned add the tomatoes, salt and cook over a high flame for about 12 minutes, turning occasionally with a "Cucchiarella" wooden spoon. On the side in a large pot boil at least 5 liters of water, just drop the paccheri bubbles, and after about ten minutes, drain them and cool them under running water. Cut the provola into sticks and stuff the paccheri. I prepare a bowl with a layer of sauce and the paccheri stuffed slowly next to each other, season with the remaining sauce and sprinkle with the Parmesan, I cook in the oven preheated at 190 ° C for just 5 minutes.
