Quadrotti Pasta with Seafood

Ingredients for 4 people

  • 600g of Quadrotti Leonessa
  • 8 shrimps
  • 1 medium squid
  • 16 big mussels
  • 20 Clams
  • 6 tablespoons of extra virgin olive oil
  • 4 Cherry tomatoes
  • 1 clove of Garlic
  • Parsley


Clean the mussels. Cook them in a covered pan, with the clams and let them open (in a bit of water). Then remove the shells and keep the shelled mussels and clams in the cooking water, previously filtered. Clean the shrimp and take off the gut from the back and cut the squids into strips. In a pan, fry the crushed whole garlic, in oil and when it gets brown, take it off and add the shrimp, squid, tomatoes cut in half, and cook for 3-4 minutes. Finally add the seafood shelled with some of their cooking water. Cook the pasta in salted water, drain it and cream it with the seafood sauce by adding finely chopped parsley.
