Paglia e fieno with Speck and flowers pumpkin

Ingredients for 4 people

  • 600 gram of fresh paglia e fieno pasta (or noodles)
  • 80 g of bacon (or speck)
  • 1 / 2 onion
  • 10 flowers pumpkin
  • parmesan cheese and grated pecorino Romano cheese
  • 100 ml of cream
  • ½ cup of white wine
  • 3 tablespoons extra virgin olive oil.


Cut the onion sliced thin and brown it in oil, add the sliced bacon (or speck) and let brown for a few minutes, then add white wine and let evaporate, finally add flower pumpkin cut in giuliane way, a little water took from cooking pasta and cook for 4 / 5 minutes. Apart cook the noodles in boiling water, drain al dente and skip everything in the pan by adding the cream and cheese. Serve hot.
