Ingredients for 4 people

  • 400 g of wolf eyes Leonessa
  • 350 g fresh piccadilly tomatoes
  • 1 fresh ginger root
  • 1 rind of half a lemon
  • 1 fresh spicy chilli pepper
  • 1 garlic
  • parsley
  • salt
  • pepper
  • extra virgin olive oil


Clean the spices, starting with garlic, and cut into slices. Grate the lemon. Cut the pepper lengthwise and remove the seed. 2. Cut the fresh tomato into four parts. 3. Cook the wolf's eye pasta in salted water. 4. In the 15 minutes of cooking pasta, prepare the sauce, browning the tomatoes in a pan with a little oil. Add salt and, after 2-3 minutes, add the spices: red pepper, garlic, ginger and lemon zest. Finally add a ladle of pasta cooking water. 5. Drain the pasta and add it to the sauce. Mix the sauce well and serve. If desired, sprinkle the intense wolf eyes with parsley.
